較熟的蕃茄可以節省烹煮時間

蕃茄是一種頗特別的食材,當中含的蕃茄紅素是需要烹煮才會釋出。

辨別蕃茄紅素的方法是開始出現橙色的泡沫,這需要用大火烹煮才會出現的。要節省能源又煮出有營養的蕃茄,較為成熟的蕃茄最為理想。若煮湯的話,用大火十數分鐘便能有理想的較果。

蕃茄是帶酸的,加少許冰糖才會美味。早點下冰糖對加熱也有一定的幫助。
